what’s cookin'

My mom always made this recipe when I was living at home and it’s one of my favorite things about summer. I suppose it could technically be made in any season, but there’s nothing like local, seasonal fruit that makes this recipe absolute perfection for this time of year.

I used my classic sugar cookie dough recipe for the base of my fruit pizza:
2 sticks of butter, melted
11/2 cups of white sugar
2 eggs
1/4 tsp vanilla
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
AP flour until it looks like cookie dough
{I just melt the butter then whisk in ingredients one at a time in the order listed. Bake 350 for 20 minutes. Pretty much the easiest sugar cookie recipe ever. I’m a big fan of simple.}

While the cookie is baking, I slice up my fruit and make the cream topping and fruit syrup.

Cream Topping: 
1 pkg of Neufchatel Cheese
1/2 cup powdered sugar
2 tbsp of orange concentrate
{Whipped together with mixer until fluffy.}

Fruit Syrup:
1/2 can of orange concentrate
a few squirts of honey
1/4 cup heavy whipping cream
{Simmer on medium heat until thickens slightly... Warning: This stuff smells just like a creamsicle and may require an extra dose of self-control to resist pouring directly into your mouth.}


Once the cookie has cooled, spread on the cream topping, assortment of fruit, and drizzle with the fruit syrup. Delicious and 100% proof that summer has arrived!

Yum! This is one of my favorites. I also saw a recipe for fruit tacos using the same premise, but with cookies baked in a curve shape!
