When stressed, I clean. There is something satisfying about knowing that, even when I can't seem to change circumstances, I can make that wood floor the shiniest its ever been.
As of last night, this all changed.
It was just a yucky night in general. Jason was writing an article for law review that just wouldn't seem to come together. He is certainly not the type to get stressed over school or work. . . I'm usually the one with the weekly breakdowns come mid-semester. I don't think I've ever seen Jason so stressed about a project as he was last night, but there was absolutely nothing I could do to help and it was a horribly helpless feeling. This is usually the point at which I would whip out my organic cleaning concoctions and go to town, but there was a problem - nothing to be cleaned. So. . . I decided to bake.
Cupcakes to be exact.
Boy oh boy did I underestimate this art. I cook all the time. I love to cook. But baking is a whole different ballgame!!! I decided that I would attempt cupcakes 100% from scratch. This is how it went. . . . . . .
Cupcakes, round 1: Super runny before baking, super dry after baking, and barely even sweet. (AND this was from Martha Stewart!)
Cupcakes, round 2: Super fluffy and thick before baking, slightly dry and crumbly after baking.
Icing, round 1: Egg whites forming peaks, sugar and corn syrup addition successful, then butter turns it into soup that tastes more like vanilla ice cream. (It's in the freezer at the moment)
Icing, round 2: Flavor - Good, Texture - Runny. Insert additional confectioners sugar. Texture - Good, Flavor - WAY too sweet.

But I will not surrender. I may be out of eggs and butter, but as soon as I re-stock I'm back at it. The homemade cupcake will not defeat me!
