As you know we’ve replaced floors, walls, and even a sink or two, and yea, things are beginning to look a lot more normal... until you enter the kitchen. You could call it our final frontier of sorts. Though the cabinets have been refinished, we are still - 12 days after move-in - without counter tops. You would not believe how creative such a challenge will make you - that is, once you finally decide that cooking is worth the effort. I have to be honest and say that my first coping strategy was avoidance (and I’m sure there are a thousand ways to psychoanalyze that) which resulted in more pizza and taco bell in a week than any healthy person should consume in a lifetime.
Once I finally decided to face my cooking challenge head-on my tool of choice was a Rubbermaid lid... yep... all sprawled out, posing like a counter top. It’s been great Rubbermaid, but I am happy to say that today was your last as a counter top. Our granite is finally being delivered tomorrow! I can’t believe it and I hope these counters are so great that thoroughly forget what life was ever like without them... but before I do, I’d like to remember my first official dish of our new home, made on a Rubbermaid lid.
{fresh pico-de-gallo...}
{these were #2... oreo stuffed chocolate chip cookies}
And if things this tasty can come from a counterless kitchen, I can only imagine - with great anticipation and a growing appetite - what will be next! =)
